Stuffed zucchini with Pork neck smoked on beech wood

Necessary ingredients:
– Pork neck smoked on beech wood
– Zucchinis
– Egg х1
– Shredded carrot
– Tablespoon of butter x 2
– Small onion x 1
– Shredded yellow cheese
– Pepper
– Salt

Preheat the oven at 200 degrees. Cut the zucchinis in half, lengthwise. Take out the inner part and the seeds of the zucchini with a spoon. Whisk the egg in a bowl. Then finely chop the pork neck and the onion, shred the carrot and mix all these ingredients with the butter and then mix them with the egg. Season with pepper and salt. Divide the mixture among all zucchinis and fill them with it. Place the zucchinis in a baking tray and cover them with foil. Bake for 10 min. in the preheated oven. Then remove the foil and bake for 20 more min. At the end add half a spoon of the shredded kashkaval on each zucchini and return them in the oven for 2-3 min. until melted. Serve them warm.
